Ingredients
  

  • 1/4 cup robust olive oil for sautéing
  • 2 cups yellow onion, finely chopped about 2 medium onions
  • 1-1/2 cups peeled and diced carrots about 4 medium carrots
  • 1-1/2 cups finely chopped celery ribs approximately 4 stalks
  • 1 tablespoon fresh garlic, minced around 4 cloves
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon Italian herb blend
  • 1-1/2 teaspoons ground cumin
  • 1 teaspoon dried thyme leaves
  • 1/8 teaspoon crushed red pepper flakes
  • 2 (32-ounce) cartons of vegetable broth preferably Swanson’s
  • 1-1/2 cups dried green split peas, rinsed and picked over
  • 2 dried bay leaves
  • 1 Zest and juice of fresh lemon, optional
  • 1/2 teaspoon turmeric powder
  • 1/4 cup chopped fresh parsley, stirred in before serving

Method
 

Step 1: Prepare the Ingredients
  1. Start with a clean workspace. Gather your ingredients. Chop the onions, carrots, and celery. Mince the garlic. Rinse the split peas and pick out any small stones or debris. This prep will save you time and make the cooking process smoother.
Step 2: Sauté the Aromatics
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions, stirring occasionally. You’re aiming for them to become translucent, so let them sizzle for about 5 minutes. Next, toss in the carrots and celery, cooking for another 5 minutes. The aroma will be inviting—don't forget to add the minced garlic in the last minute of cooking, as garlic burns easily.
Step 3: Add Spices and Peas
