Ingredients

  • 1 packet instant yeast² 2 ¼ teaspoons
  • 1 ½ teaspoons granulated sugar
  • 2 tablespoons extra virgin olive oil + extra for greasing
  • 1 teaspoon honey
  • ¾ cup warm water
  • 2-2 ⅓ cups all-purpose or bread flour¹, separated
  • ½ teaspoon onion powder
  • ¾ teaspoon fine salt
  • ⅛-¼ teaspoon garlic powder and/or dried oregano optional

Method

Step 1: Prep the Yeast
  1. Start by combining the warm water, sugar, and honey in a bowl. Sprinkle the yeast over the top. Stir gently and let it sit for about 5-10 minutes until it becomes frothy. This means your yeast is alive and kicking.
Step 2: Mix the Dry Ingredients
  1. In a large mixing bowl, combine 2 cups of flour, salt, onion powder, and garlic powder (if you're using it). Whisk them together. This ensures even distribution of flavors.
Step 3: Combine Wet and Dry
  1. Once your yeast mixture is frothy, add the olive oil and pour it into your flour mixture. Stir with a wooden spoon until it begins to come together. It should look shaggy at this point.
Step 4: Add More Flour
  1. Dust a clean surface with flour and transfer the dough onto it. Knead it, adding more flour as necessary until the dough is smooth and elastic. This usually takes around 8-10 minutes.
Step 5: First Rise
  1. Shape your dough into a ball and place it in a greased bowl. Cover it with a kitchen towel or plastic wrap. Let it rise in a warm place until it doubles in size, usually about 1-2 hours.
Step 6: Shape the Dough
  1. After it rises, punch it down to release the air. Then, turn it out onto a floured surface. Divide it if you want to make more than one pizza. Shape into a ball and let it rest for another 10-15 minutes.
Step 7: Roll and Bake
  1. Preheat your oven to its highest setting. Roll out the dough into your desired shape, top with sauces and toppings, and bake on a preheated pizza stone or baking sheet. The aroma that fills your kitchen? Pure magic.

Notes

  • Use High-Quality Flour: Bread flour or all-purpose flour with higher protein content yields better gluten development.
  • Don’t Rush the Rise: Longer fermentation can enhance flavor. If possible, let it rise overnight in the fridge for a superb texture.
  • Warm Water is Key: Ensure your water is warm but not hot. Ideal temperature is about 100°F (38°C). Too hot, and you’ll kill the yeast.
  • Adjust Based on Humidity: If you live in a humid area, you might need less water. Be prepared to adjust as needed.
  • Preheat the Oven Thoroughly: A hot oven is essential for a crispy crust. Preheat it for at least 30 minutes before baking.
