Ingredients
Method
Step 1: Prepare the Spanish Rice
- In a saucepan, melt 1 to 2 tablespoons of unsalted butter over medium heat.
- Stir in the jasmine rice, coating it in the butter for about 2 minutes.
- Add the chicken stock, tomato paste, and the spices.
- Bring to a boil, then reduce the heat and cover. Simmer for 18-20 minutes until the rice is fluffy.
Step 2: Cook the Ground Beef
- In a skillet, heat 1 tablespoon of olive oil over medium heat.
- Add finely chopped garlic and cook until aromatic.
- Toss in the ground beef and seasonings. Cook until the beef is browned, breaking it apart as it cooks.
- Stir in beef stock and tomato puree. Let it simmer for about 5 minutes, allowing the flavors to meld.
Step 3: Make the Chipotle Sauce
- In a bowl, combine mayonnaise, sour cream, lime juice, honey, and spices.
- Stir until smooth and set aside.
Step 4: Assemble the Burrito
- Lay one tortilla flat, spreading some melted nacho cheese over it.
- Spoon in some Spanish rice, followed by the beef mixture.
- Add tortilla strips, a drizzle of chipotle sauce, and jalapeños.
- Roll tightly, then repeat for the other tortillas.
Step 5: Grill the Burrito
- Heat a skillet over medium heat. Add some oil or butter to the pan.
- Place the burrito seam-side down and cook until golden brown and crispy.
- Flip and repeat for the other side.
Step 6: Slice and Serve
- With a sharp knife, slice the burrito in half to reveal that cheesy goodness.
- Serve with the remaining chipotle sauce and enjoy!
Notes
- Choose Your Tortillas Wisely: Go for thick tortillas to avoid tearing when rolling.
- Don’t Overstuff: This keeps your burrito contained and easier to grill.
- Crispier Texture: Brush the outside of the burrito with a bit of melted butter before grilling.
- Add Your Favorite Veggies: Consider adding diced tomatoes or lettuce for freshness.
- Experiment with Cheese: Mix different cheeses for a vibrant flavor.
