Taco Bell Grilled Cheese Burrito Recipe

Taco Bell Grilled Cheese Burrito Recipe - Simple Easy Meals

The Taco Bell Grilled Cheese Burrito is a cheesy, indulgent delight that’s even better when paired with the right sides.
To complement its rich, savory flavors, start with Mexican street corn (elote). The sweetness of the corn, combined with creamy mayo, spicy chili powder, and a squeeze of lime, offers a perfect contrast to the burrito's cheesy goodness.
For a refreshing and creamy side, serve guacamole with tortilla chips. The smooth guacamole balances the burrito's richness while the crispy chips add crunch.
If you're in the mood for some heat, spicy salsa will awaken your taste buds, bringing acidity and spice to balance the burrito's indulgent flavors.
Finally, a side of cilantro lime rice adds a light, zesty element to round out the meal, offering a harmonious contrast to the boldness of the burrito.

  • 1/2-1 teaspoon salt, to taste
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked chipotle powder

Ground Beef Mixture
  • 1 pound ground beef 90/10 or 85/15
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons finely chopped garlic
  • 2 teaspoons ground chili powder
  • 1 teaspoon ground coriander
  • 3/4 teaspoon sea salt, or to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon onion granules
  • 1/4 cup beef stock
  • 1/3 cup tomato puree

Method

Step 1: Prepare the Spanish Rice
    • In a saucepan, melt 1 to 2 tablespoons of unsalted butter over medium heat.
    • Stir in the jasmine rice, coating it in the butter for about 2 minutes.
    • Add the chicken stock, tomato paste, and the spices.
    • Bring to a boil, then reduce the heat and cover. Simmer for 18-20 minutes until the rice is fluffy.
Step 2: Cook the Ground Beef
    • In a skillet, heat 1 tablespoon of olive oil over medium heat.
    • Add finely chopped garlic and cook until aromatic.
    • Toss in the ground beef and seasonings. Cook until the beef is browned, breaking it apart as it cooks.
    • Stir in beef stock and tomato puree. Let it simmer for about 5 minutes, allowing the flavors to meld.
Step 3: Make the Chipotle Sauce
    • In a bowl, combine mayonnaise, sour cream, lime juice, honey, and spices.
    • Stir until smooth and set aside.
Step 4: Assemble the Burrito
    • Lay one tortilla flat, spreading some melted nacho cheese over it.
    • Spoon in some Spanish rice, followed by the beef mixture.
    • Add tortilla strips, a drizzle of chipotle sauce, and jalapeños.
    • Roll tightly, then repeat for the other tortillas.
Step 5: Grill the Burrito
    • Heat a skillet over medium heat. Add some oil or butter to the pan.
    • Place the burrito seam-side down and cook until golden brown and crispy.
    • Flip and repeat for the other side.
Step 6: Slice and Serve
    • With a sharp knife, slice the burrito in half to reveal that cheesy goodness.
    • Serve with the remaining chipotle sauce and enjoy!

Notes

  • Choose Your Tortillas Wisely: Go for thick tortillas to avoid tearing when rolling.
  • Don’t Overstuff: This keeps your burrito contained and easier to grill.
  • Crispier Texture: Brush the outside of the burrito with a bit of melted butter before grilling.
  • Add Your Favorite Veggies: Consider adding diced tomatoes or lettuce for freshness.
  • Experiment with Cheese: Mix different cheeses for a vibrant flavor.
