Summer is upon us, and I can already feel the heat. It’s time for gatherings, barbecues, and, of course, colorful salads. Today, I want to share with you my enthusiasm for one of my all-time favorites: Southwest Quinoa Salad. This dish is not just a salad; it’s a celebration of vibrant flavors and textures. 
As a registered dietitian, I have experimented with myriad recipes, but this one holds a special place in my heart.
Why? Because it’s simple, nutritious, and just downright delicious. Let’s break down what makes this salad amazing and how you can whip it up in your own kitchen.

Ingredients
  

For the lime vinaigrette:
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon raw honey
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
For the salad:
  • 2 teaspoons extra virgin olive oil
  • 2 garlic cloves, finely minced
  • 1 cup quinoa, thoroughly rinsed and drained
  • 1 3/4 cups low-sodium vegetable broth or water
  • 1 cup canned corn kernels, drained
  • 1 can black beans, drained and rinsed 15-ounce
  • 1 red bell pepper, diced
  • 4 green onions, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
For serving:
  • Guacamole or sliced avocado, if desired
  • 1/4 teaspoon smoked paprika optional, for a smoky kick

Method
 

Step 1: Prepare the Quinoa
  1. Start by rinsing the quinoa under cold water to remove its natural coating, which can taste bitter. In a pot, combine the rinsed quinoa with the vegetable broth. Bring it to a boil, then reduce heat, cover, and let it simmer for about 15 minutes. When done, remove from heat and let it sit for 5 minutes before fluffing it with a fork.
Step 2: Make the Lime Vinaigrette
  1. While the quinoa is cooking, whisk together lime juice, olive oil, honey, chili powder, and cumin in a small bowl. Season with salt and pepper according to your taste. This dressing adds the perfect zing!
Step 3: Combine Salad Ingredients
  1. In a large mixing bowl, combine the corn, black beans, red bell pepper, green onions, and cilantro. Once the quinoa has cooled a bit, add it to the bowl and mix well.
Step 4: Dress the Salad
  1. Pour the lime vinaigrette over the salad. Toss everything together gently, ensuring the dressing evenly coats all the ingredients.
Step 5: Serve
  1. You can savor this salad immediately or let it chill in the fridge for a while. It’s delicious either way! Just before serving, top with slices of avocado or a scoop of guacamole and sprinkle with smoked paprika if you choose.
