Simple Bruschetta

Simple Bruschetta - Simple Easy Meals

Have you ever bitten into a piece of bruschetta and felt an instant transport to a sun-soaked Italian terrace? I remember my first experience at a small trattoria in Florence. The simplicity of the ingredients amazed me—fresh tomatoes, fragrant basil, and a drizzle of olive oil. That moment sparked my love for this classic dish. Today, I want to share my version of simple bruschetta, a recipe that honors tradition but allows for creativity in the kitchen.

Ingredients

  • 1/4 cup fresh basil leaves cut into thin ribbons, chiffonade
  • 1/2 tsp black pepper freshly cracked
  • 1 tsp fresh lemon juice to brighten the tomato mixture
  • 26 oz ripe Roma tomatoes about 7–8 medium, diced
  • 1 1/2 Tbsp fresh garlic finely minced
  • 1/2 tsp red chili flakes optional, for a mild kick
  • 1/4 cup Parmesan cheese finely grated
  • 1 loaf rustic French bread 14.5 oz, such as La Brea, sliced 1/2-inch thick, about 12 slices
  • 1 Tbsp aged balsamic vinegar add more to taste
  • 3/4 tsp kosher salt plus extra if needed
  • 1/4 cup extra-virgin olive oil

Method

Step 1: Prepare the Tomato Mixture
  1. First, take your ripe Roma tomatoes and dice them. Aim for small, uniform pieces. Toss the diced tomatoes into a mixing bowl. Now, add the freshly minced garlic, chiffonade basil, and the olive oil. Remember to sprinkle in the aged balsamic vinegar and mix it all together gently. Season with kosher salt and freshly cracked black pepper. A touch of lemon juice can brighten the flavors beautifully. Let this mixture sit for about 15-20 minutes to allow the flavors to mingle.
Step 2: Toast the Bread
  1. While your tomato mixture is coming to life, it’s time to prepare the bread. Preheat your oven to 400°F (200°C). Slice your French bread into ½-inch thick pieces. Arrange them on a baking sheet and brush both sides lightly with olive oil. Place the bread in the oven, baking until golden and crisp—about 8-10 minutes. If you prefer a more rustic approach, grilling the slices can add a smoky flavor.
Step 3: Assemble the Bruschetta Toppings
  1. Once your bread has toasted to perfection, it's time to assemble. Spoon the tomato mixture onto the toasted bread slices generously. Each bite should capture the essence of the tomatoes and the freshness of the basil. If you desire extra flavor, sprinkle some finely grated Parmesan cheese on top.

Notes

  • Use High-Quality Ingredients: Great bruschetta starts with top-shelf olive oil and the freshest tomatoes.
  • Toast Bread Carefully: Don’t rush the toasting process; perfectly crisp bread enhances the texture.
  • Let the Mixture Rest: Allowing the tomato mixture to marinate brings out all the flavors.
  • Experiment with Toppings: Feel free to add your favorite toppings, such as diced avocado or crumbled feta.
  • Serve Immediately: Bruschetta is best served fresh to keep the bread from getting soggy.
