Ingredients

  • 2 tablespoons unsalted butter, melted 28 g – adds richness and depth
  • 1/2 teaspoon freshly ground black pepper a hint of spice that balances flavors
  • 1 teaspoon Diamond Crystal kosher salt enhances all the natural tastes
  • 2 medium delicata squash, cleaned and halved approximately 2 pounds; 907 g total – the star of our dish
  • 1/2 teaspoon smoked paprika introduces a warm, subtle smokiness
  • 1 teaspoon maple syrup or honey, optional sweetens the dish, amplifying the squash’s natural sugars

Method

Step 1: Preheat Your Oven
  1. First things first, you need to preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). This temperature is perfect for roasting, yielding wonderfully caramelized results.
Step 2: Prepare Your Squash
  1. While the oven warms, wash the delicata squash thoroughly under cold water to remove any dirt. Pat it dry with a towel. Next, using a sharp knife, slice each squash in half lengthwise. Be cautious; these squashes can be tough to cut!
Step 3: Remove Seeds
  1. Now that the squash is halved, it’s time to get rid of the seeds. Use a spoon to scoop out the seeds and stringy bits from the center. It’s helpful to have a small bowl on hand to collect them.
Step 4: Season the Squash
  1. In a mixing bowl, whisk together the melted butter, black pepper, salt, and smoked paprika. This mixture will beautifully coat the squash. Brush or drizzle the mixture over the cut sides of each squash half, making sure to coat them evenly for maximum flavor.
Step 5: Arrange on a Baking Sheet
  1. Line a baking sheet with parchment paper for easy cleanup. Place the squash cut side down on the sheet. This positioning helps in achieving that lovely caramelization on the cut surface when the heat hits.
Step 6: Roast the Squash
  1. Pop the baking sheet into the preheated oven and roast for about 30-35 minutes or until the squash is fork-tender and the edges are nicely caramelized. You might want to flip them halfway through for even cooking.
Step 7: Drizzle with Sweetness
  1. In the last few minutes of roasting, you can opt to drizzle maple syrup or honey over the squash. This step is purely optional but recommended if you enjoy that extra touch of sweetness.
Step 8: Serve
  1. Once finished, remove the baking sheet from the oven. Allow the squash to cool for a couple of minutes before serving. You can cut them into wedges for an elegant presentation.

Notes

  • Choose the Right Squash: Look for firm squash with a smooth skin. Avoid any with soft spots or blemishes.
  • Don’t Overcrowd the Pan: Give the squash space on the baking sheet. Crowding can lead to steaming instead of roasting.
  • Mix Up the Spices: Experiment with spices! Consider adding cinnamon for warmth or cumin for an earthy touch.
  • Garnish For Flair: Fresh herbs like parsley or thyme brightens up the dish and adds a pop of color.
  • Watch the Time: Ovens can vary, so check on the squash at the 25-minute mark to prevent burning.
