Ingredients
  

  • 2 teaspoons minced garlic
  • 1 tablespoon white wine vinegar
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon Himalayan salt
  • 2 tablespoons filtered water
  • 1 1/2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup finely grated Parmesan cheese
  • 1/4 cup egg replacer
  • 1 cup creamy mayonnaise
  • 1 tablespoon anchovy paste
  • 2 teaspoons organic sugar
  • 1/2 teaspoon cracked black pepper
  • 1/4 teaspoon crushed dried parsley

Method
 

Step 1: Prepare the Lettuce
  1. Start by thoroughly washing the romaine lettuce. Remove any bruised or damaged leaves. Once cleaned, chop or tear the lettuce into bite-sized pieces. Place it in a large bowl or on a serving platter.
Step 2: Make the Dressing
  1. In a medium bowl, combine the minced garlic, white wine vinegar, Dijon mustard, Himalayan salt, water, freshly squeezed lemon juice, and extra virgin olive oil. Whisk these ingredients together until they are well blended.
    Next, add the egg replacer, creamy mayonnaise, anchovy paste, organic sugar, cracked black pepper, and dried parsley. Whisk again until the dressing is smooth and creamy. Taste and adjust the seasoning as needed.
Step 3: Add the Croutons and Cheese
  1. Sprinkle the croutons over the lettuce. Then, drizzle the dressing generously based on your preference. Toss everything gently. Finally, sprinkle freshly grated Parmesan cheese on top. You’re ready to serve!
