Ingredients
  

  • 1 1/2 cups finely chopped Medjool dates 225g
  • 2 cups plain all-purpose flour 240g
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon flaky kosher salt
  • 1/2 teaspoon warm ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon ground allspice
  • 1/2 cup unsalted butter, at room temperature 113g
  • 1 cup packed light brown sugar 213g
  • 1 large farm-fresh egg
  • 1 teaspoon pure vanilla extract
  • 1/4 cup whole milk or 2% works too
  • 3/4 cup toasted walnuts, roughly chopped 85g
  • 2 tablespoons maple syrup 30ml
  • 1/2 teaspoon orange zest

Method
 

Step 1: Preheat Your Oven
  1. First, preheat your oven to 350°F (175°C). This ensures the cookies bake evenly and come out deliciously golden.
Step 2: Prepare Your Ingredients
  1. While the oven heats, gather all your ingredients. Make sure the butter is softened. If it's cold, it won’t cream well with the sugar. Chop your Medjool dates and walnuts, setting them aside in separate bowls.
Step 3: Mix the Dry Ingredients
  1. In a medium bowl, combine the flour, baking soda, salt, cinnamon, nutmeg, and allspice. Whisk them well to blend; this prevents clumps in your cookies. Set this aside for later.
Step 4: Cream Butter and Sugar
  1. In a large mixing bowl, cream together the unsalted butter and brown sugar. Use an electric mixer on medium speed until light and fluffy, which usually takes about 2-3 minutes. This step is crucial; it adds air to the batter.
Step 5: Add the Egg, Vanilla, and Milk
  1. Next, add the farm-fresh egg, vanilla extract, and milk to your creamed mixture. Mix on low speed until combined. This mixture should become smoother and creamier.
Step 6: Blend in Dry Ingredients

Step 7: Fold in the Dates and Walnuts
  1. Now, gently fold in the chopped dates, walnuts, maple syrup, and orange zest using a spatula. It may start looking quite delicious at this step!
Step 8: Portion and Bake
  1. Scoop your dough onto a greased or parchment-lined baking sheet. Leave some space between each cookie, as they will spread slightly while baking. Aim for cookie mounds about 2 inches apart.
Step 9: Bake Those Cookies
  1. Place your baking sheet in the oven and let them bake for about 12-15 minutes or until the edges are lightly golden but the centers are soft.
Step 10: Cool & Enjoy
  1. Remove them from the oven and allow cookies to cool on the baking sheet for 5 minutes. Then transfer them to a wire rack to cool completely. Taste? Phenomenal!
