Method
 

Step 1: Sauté the Onions and Mushrooms
  1. Start by heating two tablespoons of olive oil in a skillet over medium heat. Add your sliced onions and cook until they become soft and translucent, about 4-5 minutes. Next, toss in the mushrooms. They should start releasing their moisture, becoming tender and infused with the sweetness of the onion. 
    This all takes about another 5 minutes or so. Don’t forget to add salt and pepper to taste, and if you’re using thyme, sprinkle it in during the last minute. Optional balsamic vinegar? Drizzle it in now. This will wake up the mixture with a hint of acidity that balances the richness of the cheese.
Step 2: Assemble the Sandwich
  1. Grab your bread slices. On two of them, place a generous amount of your sautéed mushroom and onion mixture. Top this hearty filling with a generous cup of shredded gouda. Then place the other two slices of bread on top. Really press down a bit to give it a snug fit.
Step 3: Butter Up
  1. Melt two tablespoons of butter in the skillet over medium-low heat. Place the sandwiches in the pan and let them toast slowly. This gentler cooking method allows the cheese to melt perfectly without burning the bread. Cook for 3-4 minutes or until the bottoms are golden brown.
