Ingredients
  

Caesar Dressing:
  • ¼ cup high-quality extra virgin olive oil
  • 1 large egg yolk, room temperature
  • 2 tablespoons freshly squeezed lemon juice

  • 4 anchovy 4-6 fillets, finely mashed
  • 2 cloves garlic, minced into a paste

For the Croutons:
  • 2 tablespoons olive oil or melted butter
  • 2 cups cubed rustic French bread or ciabatta
  • 1 clove garlic, finely minced
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste
For the Caesar Salad:
  • 1 large head of crisp romaine lettuce, roughly chopped or torn
  • ½ cup delicate Parmesan shavings
  • 1 cup handcrafted golden croutons

Method
 

Step 1: Prepare the Dressing
  1. Begin with the dressing. In a bowl, combine the egg yolk, lemon juice, Dijon mustard, Worcestershire sauce, mashed anchovies, and garlic. Whisk these ingredients together until they’re well blended.
    Gradually drizzle in the olive oil while continuing to whisk, creating an emulsion. Next, stir in the Parmesan, honey, salt, and pepper. This dressing should feel alive with flavor.
Step 2: Make the Croutons
  1. Now onto the croutons. Preheat your oven to 375°F (190°C). In a bowl, toss the cubed bread with olive oil, minced garlic, oregano, salt, and pepper.
    Spread the bread cubes on a baking sheet in a single layer. Bake for 10-15 minutes until golden brown and crispy. The aroma filling your kitchen will have everyone eagerly awaiting the salad.
