Method
Step 1: Preheat the Oven
- Set your oven to 375°F (190°C). This will prepare it for cooking your frittata uniformly while allowing the flavors to develop.
Step 2: Sauté Aromatics
- In a large oven-safe skillet, heat a tablespoon of extra-virgin olive oil over medium heat. Add the finely chopped garlic and sliced shallot. Sauté for about 2-3 minutes, or until softened and aromatic. Your kitchen will start to smell fantastic.
Step 3: Add Spinach and Squash
- Toss in the fresh baby spinach and combine with the garlic and shallots. Cook just until the spinach wilts. Next, fold in the mashed butternut squash. This will add both sweetness and creaminess to your frittata.
Step 4: Whisk Eggs
- In a bowl, whisk together the eggs, whole milk, sea salt, black pepper, smoked paprika, and thyme. You can taste the richness of the eggs coming through already.
Step 5: Combine and Cook
- Pour the egg mixture over the sautéed vegetables in the skillet. Let it cook untouched for about 3-5 minutes, or until the edges start to set. This gives a lovely base to your frittata.
Step 6: Add Feta Cheese
- Sprinkle the crumbled feta cheese evenly across the top of your egg mixture. This adds a tangy bite that contrasts beautifully with the sweetness of the squash.
Step 7: Bake
- Transfer the skillet to the oven and bake for 25-30 minutes, or until set in the center. You can stick a knife in the middle to check for doneness. If it comes out clean, you’re golden.
Notes
- Prep Ingredients Ahead: Set aside some time the night before to chop veggies and mash sweet potatoes. It will save you time on the day of your brunch.
- Keep it Seasonal: Use seasonal veggies and herbs, which not only taste better but are also often more affordable.
- Mix and Match: Experiment with various ingredients and ratios. You might discover a new favorite combination.
- Presentation Matters: A sprinkle of fresh herbs or a drizzle of olive oil right before serving makes everything look gourmet.
- Use Leftovers: Make your frittata using leftovers from your previous dinners. It’s a great way to reduce waste and surprise your guests with creative uses of food they’ve already enjoyed.
