Check out this simple, easy meal from the Mexican Samurai on Youtube.  Talk about easy peasy!

(Prep time about an hour in total!)

What you need:

2 medium sized bowls and 1 large one

Medium cooking pot Sharp knife (mind your fingers!)

Cutting board (Unless you don’t mind your counter getting chopped to pieces!)


Frying pan or microwave

Tortilla’s from your local store pre made

1-2 chicken breasts

1 onion white or red

1 bunch of cilantro

1 tomato

1 crushed chili in can

Lime juice about a tsp *Optional

Tapatio sauce

Salt and pepper to taste (use less salt if you are on sodium restricted diet)

How to do it:

  1. In medium cooking pot, add water until about half way to the top.  Add a little salt if you like.  Place the chicken in the pot of water and boil.  It won’t look pretty just yet so don’t worry about it.  It will taste divine when it’s done.  It is cooked when the meat is white.
  2. Now take your tomato and cut it up into small pieces and throw it into a bowl.  Add the drained, crushed chilli’s to the tomato’s and then add as much Tapatio sauce as your little heart desires or as much as you mouth can handle.
  3. Chop up an onion and throw it into a bowl.  Chop up the Cilantro and throw that in the bowl with onions.
  4. Warm up the Tortilla shells in lightly oiled frying pan.
  5. Place the warm Tortilla shell on a plate and add the Chicken, Onion/Cilantro mixture, Tomato, Chilli Peppers and Tapatio sauce in a somewhat straight line.  Careful!  This could get messy!  Got a bib handy?
  6. Eat and enjoy
