Egg Salad Sandwich
Egg Salad Sandwich

What you need:

Stove

Pot with water enough to cover egs

Bowl

Fork

Knife or spatula

Ingredients:

Eggs (depending on how many you want to feed.  1 egg = 2 sandwiches)

Mayonnaise (homemade recipe to be added soon) or Miracle Whip

Green onion (depending on how many you want to fee.  2 stalks green onion = 2 sandwiches)

Celery (optional)

Pinch of Salt for boiling the eggs

Pinch of Salt for adding to egg mixture (Omit if on sodium restricted diet.)

Pinch Pepper

Pinch Paprika (optional)

Bread

Butter or Margarine (optional)

Optional toppings:  Tomato/Lettuce/Bean Sprouts etc.

How to make it:

  • Place eggs in a pot, depending on how many eggs you are cooking, and cover with cool water.  Add a pinch of salt and put on stove to boil.  Hard boiled eggs for this recipe take about 10 minutes once they are boiling.  May be shorter time depending on your stove.
  • Once eggs are cooked, drain the hot water and replace with cool water.  Allow eggs to cool a little so you can peel them.  A simple way to peel is just to tap cooked egg on counter and then peel or use a knife to cut through shell and then peel.
  • Cut up your green onion and celery (optional) into small pieces.
  • Place eggs in bowl with green onion and celery and chop up the egg into small pieces.
  • Add your mayonnaise, salt, pepper and paprika (optional) to egg mixture and mix together until the mayonnaise, vegetables and seasonings are mashed together.
  • Put your bread on plate and add butter or margarine, if preferred.
  • Scoop a generous amount of the egg salad mixture onto your bread and put together.
  • Enjoy!  Yes you did it!  Now go brag about it to all your friends.
