Alrighty here’s another awesome tasting diabetic recipe.  Have a ton of fun making this whether you are diabetic or just trying to cut down on your sugar.  This one is done in the microwave so you know it’s got to be super easy!

What you need:

Microwave Oven

Mixing bowls x 2

Small microwave safe bowl

Cup shaped coffee filter

Paper towel

Knife

Ingredients:

1/4 soy flour

1 tbsp unsweetened cocoa powder

1 large egg

1 tbsp vegetable oil

2 tbsp sugar substitute

1/ tsp baking soda

1/4 tsp vanilla

1 pinch of salt

Frosting:

3 tbsp sour cream

2 tbsp sugar substitute

1 tbsp unsweetened cocoa powder

1 large strawberry

How to make it:

  1. Bowl 1 sift soy flour, cocoa powder, salt and baking soda.
  2. Add egg, sugar substitute, oil and vanilla in bowl 1.  Mix until combined.
  3. Line a small microwave safe bowl with a cup shaped coffee filter (not cone).
  4. Pour batter into bowl and microwave on high for approximately 1 minute or until there are no visible wet spots.
  5. Remove cake from filter and set on paper towel to cool.
  6. Combine the frosting ingredients in bowl 2 or rinse out and reuse bowl 1.
  7. Cut cooled cake across creating two layers.
  8. Frost bottom layer and replace top layer.
  9. Frost top layer and decorate with fresh strawberry slices.
